BANANA BARS (GLUTEN-FREE)
Ingredients:
1 1/2 c GF oat flour
1/2 c butter (room temperature)
1/2 c coconut sugar
2 eggs
1 tsp lemon juice
1/2 c nut milk (I used cashew)
1 medium ripe banana
1/2 tsp baking soda
1/3 tsp salt
Frosting:
2 tbsp soft butter
1 1/2 c powdered sugar
1/4 tsp salt
1 tsp vanilla
1/2 medium banana
Directions:
1. Preheat oven at 350F.
2. Beat all the ingredients at medium speed for 2-3 minutes.
3. Spread the batter in greased 8x8 pan.
4. Bake at for 25-30 minutes.
For the Frosting:
1. Beat all ingredients until smooth and creamy thin with a few drops of milk if necessary.
2. Frost when bars have fully cooled!
