BREAKFAST CASSEROLE

 

Ingredients:
6 eggs
1/2 cup oat flour
1 (3oz) pack cream cheese
16 oz whole milk ricotta cheese
10 oz mild cheddar cheese, grated
1/3 c feta cheese
1 bunch green onions, chopped
1/4 c fresh dill, chopped
2 (6oz) cans sliced mushrooms, drained
2 Tbsp butter
1 tsp baking powder
Salt + pepper to taste
1 tsp Paprika

Optional add-ons: sausage, bacon

Directions:
1. In a large bowl, beat eggs well with a mixer.

2. Add oat flour and baking powder.

3. Cut cream cheese into small cubes and add cream cheese along with cottage cheese to egg mixture.  Add the grated cheddar cheese, feta, salt, pepper, chopped green onions, dill and mushrooms. 

4. Butter a 9x13 casserole pan and pour mixture into dish. Dot with butter and sprinkle with paprika and black pepper.

5. Bake immediately OR cover and refrigerate overnight so you can bake it the next morning - (make sure to let it sit to reach room temperature). Bake at 350 degrees for 45 minutes.
