FLUFFY PUMPKIN PANCAKES

 

Fall is here, and what better way to celebrate the season than with these Fluffy Pumpkin Pancakes? There’s something so comforting about gathering around the table on a crisp morning, enjoying the warm, cozy flavors of pumpkin spice. These pancakes are packed with all the delicious essence of pumpkin pie, sweetened naturally with maple syrup, and they’re light, moist, and absolutely irresistible!

Whether you’re looking for a special brunch recipe to impress friends or a cozy breakfast to enjoy with your family over the weekend, these pancakes are the perfect choice. Imagine serving them with fresh banana, figs, butter, and a drizzle of maple syrup—it’s the ultimate fall treat!

Ingredients:
1 1/2 cups Organic Almondmilk, I used Califia Farms
3/4 cup canned pumpkin puree
2 tbsp maple syrup
2 tbsp melted coconut oil
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1 tbsp baking powder
1 tsp pumpkin pie spice
1 tsp cinnamon
1/2 tsp salt
Avocado or coconut oil for cooking

Directions:
1. In a large bowl, whisk almond milk, pumpkin puree, coconut oil, maple syrup, and vanilla until smooth.

2. Add flour, baking powder, pumpkin pie spice, cinnamon, and salt. Mix gently, some lumps in the batter is okay:)

3. Heat a non-stick pan over medium heat and lightly grease with coconut oil. Pour about 1/3 cup batter onto the pan. Cook for 2 minutes or until bubbles form, then flip and cook for 2 more minutes until golden brown. Repeat with the rest of the batter.

4. Serve with banana, fresh figs, butter, and maple syrup or maple butter.

Notes:

  • Opt for canned pumpkin, as fresh pumpkin can have inconsistent moisture levels, which will affect the recipe.

  • Avoid overmixing the batter—this can lead to heavy, rubbery pancakes. It’s fine if the batter has a few lumps.

  • Be sure to generously grease your pan with avocado or coconut oil to prevent sticking, unless you’re using a high-quality non-stick pan. Enjoy!
