GF DOUBLE CHOCOLATE PEANUT BUTTER PEPPERMINT HOLIDAY COOKIES

Ingredients:
1 cup almond flour
1/2 cup creamy peanut butter (feel free to sub for cashew or almond butter)
1 egg
1/2 tsp cinnamon
2 1/2 tsp cocoa powder
1 tsp vanilla extract
1/4 cup brown sugar or coconut sugar
1/4 cup chocolate chips
2 candy canes (finely crushed)

 

Directions:
1. Whisk an egg with brown sugar, vanilla extract & cinnamon (this step is important so the sugar dissolved before baking).

2. Then add peanut butter and mix until well combined.

3. Throw in the chocolate chips and add the remaining dry ingredients. Mix well and form 1 1/2 tbsp of batter into round balls.

4. Press the tops down and then top with a few more chocolate & peanut butter chips.

5. Bake at 350F for 8 minutes (do not overbake).

6. Remove from the oven and sprinkle on crushed candy cane immediately‼️ Enjoy!
