GLUTEN FREE CHOCOLATE CAKE

Ingredients:
1 cup 1:1 Gluten-Free flour 
2 cup Coconut sugar
3/4 c cocoa powder
2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
1 tsp espresso (or instant coffee)
1 cup nut milk, I used cashew milk
1/2 cup avocado oil
2 eggs
1 1/2 tbsp vanilla extract

Frosting:
I used vanilla frosting from Simple Mills
1/4 cup shaved chocolate
1/4 cup crushed walnuts

Directions:
1. Preheat oven at 350F.

2. Combine dry ingredients.

3. Add milk, avocado oil, eggs and vanilla. Mix on medium speed till well combined.

4. Pour the batter into a greased 9’’x9’’ cake pan layered with parchment paper (also greased).

5. Bake for 40-50 minutes, or until toothpick comes out clean. Time depends on the oven and the size of you baking pan!


For the Frosting:
Frost when cake is fully cooled. Sprinkle with shaved chocolate and crushed walnuts.
