JUICY GREEK TURKEY MEATBALLS
Ingredients:
1 lb. ground turkey (I use ground turkey thigh)
1 egg
1 small zucchini, grated
1 small onion, finely chopped
1/2 cup crumbled feta
1/3 cup chopped parsley
1 tbsp cilantro (optional)
4 cloves garlic, minced
1/2 tsp ground coriander
salt (to taste)
1/3 tsp black pepper
1/2 tsp paprika
Directions:
1. Whisk an egg.
2. Hand mix the remainder of the ingredients then combine with the whisked egg.
3. Form the mixture into balls and place on a baking sheet sprayed with avocado oil.
4. Bake at 400 degrees for 20-25 minutes.
5. I paired mine with white rice, cabbage, cucumbers, and a mixed greens salad (olive oil, salt, pepper).
