PAN-SEARED BLUEBERRY-CINNAMON OATMEAL SLICES
Ingredients:
1 cup oatmeal
1/2 cup nut milk (I used cashew)
1 tsp cinnamon
2 tsp chia seeds
2 tbsp coconut sugar
Directions:
1. In a mixing bowl stir to combine all the ingredients.
2. Pour the oatmeal mix into a baking dish covered with parchment paper and pat to even out the lining (it should be flat). Store in the refrigerator overnight to allow the oats to soak.
4. In the morning, cut oatmeal into slices.
5. Cook oatmeal slices in coconut oil over medium-high heat on both sides for 4-5 minutes or until browned.
6. Layer with yogurt, top with blueberries, cinnamon and maple syrup. Enjoy!
