POTATO FETA BAKE
Ingredients:
10 oz cherry tomatoes
1 pound yellow baby potatoes
1 block feta cheese
7 garlic cloves
1 tsp of each: thyme, dried rosemary, paprika
1/2 tsp black pepper
2 tsp oregano
salt to taste
2 tbsp olive oil
Directions:
1. Preheat oven to 400F.
2. Thoroughly wash the potatoes.
3. Add water to a medium pot and bring to boil. Add potatoes to a boiling water and boil for 15 minutes.
4. Remove the potatoes and pop them on a baking tray. Add cherry tomatoes, oregano, thyme, dried rosemary, paprika, black pepper, salt, olive oil and garlic cloves and toss everything together. Place feta in the center of the baking dish and drizzle with olive oil.
5. Place in the oven and bake for 25 minutes.
6. Once done, stir everything together.
7. Serve while hot and creamy. Enjoy!
