PUMPKIN OATMEAL PANCAKES

Ingredients:
1/2 cup oat flour
1 egg
1/2 c pumpkin purée 
1 tbsp maple syrup 
1/4 tsp cinnamon
1/2 tsp pumpkin spice 
1 tsp baking powder
1 tsp coconut oil, melted + more for cooking
1 tbsp cashew milk or nut milk of choice 
Pinch salt 
1-2 tbsp chocolate chips (optional)

 

Directions:
1. Whisk eggs, maple syrup and pumpkin puree.

2. Add the remaining ingredients.

3. Mix until well combined.

4. Heat a skillet and add coconut oil.

5. Using a tablespoon, drop the batter onto the pan.

6. Cook over medium-low heat for about 3 minutes on each side uncovered. When flipping, be gentle and do so slowly as the pancakes are delicate.

7. Then, cover with the lid and let it cook for another minute. 

Drizzled with maple butter and sprinkled with pumpkin spice chocolate chips and dark chocolate gems.
