WARM HALLOUMI QUINOA SALAD WITH TAHINI DRESSING
Salad Ingredients:
arugula
Bulgur + quinoa mix
avocado
blistered tomatoes
chickpeas
grilled halloumi
HMSF tahini dressing
Blistered Tomatoes Ingredients:
2-3 garlic cloves
olive oil
cherry tomatoes
salt + pepper
oregano
thyme to taste
balsamic vinegar
HMSF Tahini dressing: (makes 3-4 servings):
whisk together
1/3 cup coconut aminos
2 tbsp tahini
1/2 lime juice
1 tbsp olive oil
1/3 tsp salt
1/3 tsp ground ginger
1 garlic clove, minced
How to Make Blistered Tomatoes:
1. Add 2-3 garlic cloves to the pan to infuse the olive oil. Sauté for 2-3 minutes until golden brown.
2. Add in the cherry tomatoes and cook in a super hot pan until they burst. Once they burst, toss them!
3. Add salt + pepper + oregano + thyme to taste.
4. Pour balsamic vinegar into the pan and cook the tomatoes for another minute.
Directions:
1. Add a bed of arugula to a bowl.
2. Top with the remaining ingredients and drizzle with dressing.
3. Enjoy!
