FLUFFY APPLE PIE YOGURT WHOLE WHEAT PROTEIN PANCAKES
Ingredients:
4 oz full fat vanilla or plain yogurt
3/4 cup whole wheat flour
1 egg
1/2 tsp vanilla extract
1/2 cup nut milk
1 tsp baking powder
a pinch of salt
1 tbsp flax meal
1 tsp cinnamon
2 tbsp maple syrup
1/2 apple, grated
1/4 tsp cardamom
1/4 tsp nutmeg
Directions:
1. First, whisk an egg and mix in the milk, yogurt, vanilla and maple syrup.
2. Then, add the dry ingredients. Mix well and let the batter rest for 10 min.
3. While resting, shred 1/2 of an apple and add to the batter. Mix well.
4. Preheat your pan to medium heat and coat it with coconut oil.
5. Cook pancakes for 2 1/2-3 minutes on each side covered with the lid!!
6. Serve with sautéed maple syrup apples, yogurt, maple syrup, PB for dipping and sprinkled with lots of cinnamon!
To make the sautéed maple apples: add extra coconut oil to the pan you used to make the pancakes and add thinly sliced apples. Cook for 4-5 minutes over medium heat, drizzle with maple syrup and sprinkle with salt. Cook for one more minute.
