BAKED BLUEBERRY BANANA OATS

Ingredients:
2 cups rolled oats
1 egg
2 tbsp flax meal 
2 tbsp coconut oil
1 tsp cinnamon
1 tsp baking soda 
1/4 tsp salt 
1 tsp chia seeds
1 tsp vanilla extract 
2 tbsp maple syrup or coconut sugar 
3/4 c almond milk
2 bananas ( 1 1/2 sliced into coins, remaining half mashed)
1 c blueberries 
2 scoops vital proteins collagen peptides (optional)

 

Directions:
1. Mix oats, salt, cinnamon, chia seeds & baking soda

2. In a separate bowl mix together egg, maple syrup, almond milk, vanilla extract and coconut oil

3. Combine wet and dry ingredients

4. Grease the baking dish with butter and layer it with 1 sliced banana and 1/2 c blueberries. 

5. Pour the batter over the fruit and spread evenly

6. Add the remaining 1/2 banana and blueberries and sprinkle with lots of cinnamon

7. Bake at 400F for 30-35 minutes.

8. Plate & enjoy!
