BAKED TOMATO BASIL MOZZARELLA CHICKEN

Ingredients:
1/2 c Organic Creamy Tomato Basil Soup (I used Pacific Foods)
2 pounds chicken (I used drumsticks and thighs)
2 tbsp olive oil
1 tbsp thyme
Salt + pepper to taste 
4-5 carrots
5-6 slices fresh mozzarella 
1 cup white mushrooms
Spinach for garnish

Directions:
1. Preheat oven to 400F.

2. Brush the chicken, carrots and mushrooms with olive oil and spices.

3. Place in the oven and bake for 20 minutes.

4. Remove, pour some of the Creamy Tomato Basil Soup on this of the chicken and bake for another 20 minutes.

5. Add sliced mozzarella on top of the chicken and bake for 5-7 minutes. 

6. Serve with the remaining soup, garnish with spinach. Enjoy!
