VEGAN BANANA COCONUT FRENCH TOAST

Ingredients:
3-4 slices bread (I used sourdough)
1 banana
1/2 c cashew or almond milk
1/2 tsp cinnamon
1/2 tsp vanilla extract
1 tbsp shredded coconut for toppings

 

Directions:
1. Mash the banana, add almond milk, cinnamon, vanilla and stir well.

2. Preheat your griddle/pan and coat it with coconut oil. 

3. Dunk the bread into the batter, allowing a soak of 3-5 seconds on each side.

4. Transfer the bread to pan immediately and cook over medium heat for 3-4 minutes on each side.

5. Best served warm with desired toppings!

6. I like to top mine with bananas, shredded coconut, peanut butter and hemp seeds.
