BAKED YUCA FRIES

Yogurt Ranch Dressing:
1/2 cup Siggi’s yogurt
1 clove of minced garlic
1 tbsp brown mustard
1/4 tsp black pepper
1/2 tsp paprika
1/2 tsp dill weed
1/2 tsp fresh chopped parsley
1/2 tsp fresh chopped chives

Mix well & enjoy!


Ingredients:

2 large yuca roots (cassava)
coconut oil
garlic salt
salt
pepper


Directions:

1. Peel 2 large yuca roots and cut into desired shapes.

2. Rinse yuca (cassava) and place in a pot with boiling salted water. Boil on medium heat until tender (i boiled for 10 minutes). Do not overcook—it will be mushy.

3. Drain and pat dry the cooked cassava.

4. Line a baking sheet with parchment paper and place the cassava in a single layer.

5. Coat with coconut oil, sprinkle with salt, garlic powder, a dash of black pepper and bake at 400F for 20-25 minutes or until slightly brown, flipping halfway though.

6. Serve warm with homemade ranch dressing!
