GF LEMON RICOTTA PANCAKES
Ingredients (Serves 2):
*8 oz (1 cup) ricotta cheese
1 tbsp coconut sugar
2 tbsp lemon juice
lemon zest from 1 small lemon
1 tsp vanilla extract
1 egg
1/4 cup almond flour
1/4 cup brown rice flour
*I like making it with farmers cheese too if ricotta cheese isn’t available
Directions:
1. Combine all ingredients.
2. Heat a skillet over medium heat and add vanilla ghee or coconut oil.
3. Form cakes into balls (I like to use cookie scooper) with lightly floured hands. Dust them in more flour and transfer into the skillet, and lower the heat.
4. Cook for about 3-4 minutes on each side uncovered. Then, cover with the lid and let it cook for another 1-2 minutes.
5. Love pairing them with yogurt, nut butter, berries and honey or maple syrup.
