BEST GLUTEN-FREE OATMEAL-COCONUT CREPES
Ingredients:
1 cup gluten free oat flour (you can use regular oat flour)
2 tablespoon coconut flour
2 pasture-raised eggs
2 tablespoon coconut sugar
1 1/4 cup milk of choice
1 teaspoon baking powder
1/2 teaspoon vanilla extract
pinch salt
Directions:
1. In a large mixing bowl, whisk together eggs, vanilla extract and coconut sugar until sugar is dissolved.
2. Add milk, mix and then add the remaining ingredients and mix until well combined.
3. The batter should be very thin, slightly thinner than heavy cream with no lumps.
4. Preheat a lightly oiled (I used coconut oil) non-stick frying pan over medium high heat.
5. Pour a scoop of batter into the pan and cook the crepe for about 1 minute on each side until the bottom is light brown - add butter on each crepe when finished cooking.
6. Enjoy with your favorite jam, yogurt or honey!!
