GF SALMON-SHRIMP BURGERS

Ingredients:
12 oz Wild Salmon
8 oz Jumbo Shrimp (approximately 6 pieces)
1/3 c shredded zucchini
2 tbsp parmesan cheese, shredded
1 tbsp Coconut Cream OR Heavy Cream
1 tbsp Coconut Flour
1/4 c fresh parsley, chopped
1-2 TBSP chopped scallions
1/2 tsp ground thyme
1/4 tsp black pepper
1/2 tsp pink salt
1/2 tsp garlic powder 
1-2 tbsp olive oil for cooking

Directions:
1. Preheat your oven to 400F.

2. Finely chop the shrimp and salmon.

3. In a medium sized bowl whisk an egg and add in the coconut / heavy cream, chopped salmon, shrimp, zucchini and fresh herbs.

4. Mix well and add in the remaining ingredients.

5. Preheat a non-stick pan at medium heat and add olive oil.

6. Scoop 2 tablespoons of the mixture per patty.

7. Transfer the patties into the pan and cook for 2-3  minutes on each side until golden brown.

8. Transfer the patties into the tray covered with parchment paper and lightly greased with olive oil.

9. Bake for 12 minutes. 

This recipe makes 6-7 patties.
