BLUEBERRY CRUMBLE PIE OATMEAL PROTEIN MUFFINS

Ingredients:
1 3/4 cup GF or regular oat flour
1/4 cup coconut sugar (increase to 1/2 cups of you like sweeter muffins)
2 scoops Vital Proteins Collagen Peptides (optional)
2 1/2 tsp baking powder
3/4 tsp salt
1 egg, well beaten
3/4 cup almond milk
1/3 cup coconut oil
1 cup blueberries

 

Directions:
1. Preheat oven to 400F.

2. Mix together dry ingredients.

3. Combine almond milk, egg, and coconut oil and add to dry ingredients. Then, add blueberries but make sure you don’t over mix.

4. Put the batter in a greased muffin pan and bake for 20-22 minutes.

*I do not recommend using any other protein powder as it can affect the taste of the muffins. I used Vital Proteins as it has no taste and it works great for the baked goods (it’s optional tho).
