BURRATA & AVOCADO TOAST W/ FRIED EGGS

To Make Eggs:
1. Melt 1 tbsp of unsalted butter in a medium cast-iron skillet over medium heat. When the butter foams, add eggs.

2. As the eggs cook, carefully tilt the pan toward you so that the butter puddles towards the edge, then use a spoon to baste the hot butter over the egg whites (avoid the egg yolks).

3. Baste until no jiggly white remains, 2 to 3 minutes (I cooked for additional 2 minutes as I like them to be crispy) pour the browned butter over the eggs for extra deliciousness!

4. Plate up with your toast and enjoy!

 

To Make Toast:
Sourdough toast topped with burrata cheese, avocado drizzled with EVOO, a sprinkle of salt, black pepper and red chili flakes
