CHOCOLATE-COVERED MASCARPONE TRUFFLES
Ingredients:
8 oz mascarpone cheese
1/2 cup almond flour
1/4 tsp almond extract
1 cup chocolate chips
1 tbsp coconut oil
Toppings: crushed nuts, shredded coconut, sprinkles, grated chocolate
Directions:
1. Combine mascarpone with almond flour and almond extract.
2. Place the dough out onto a work surface and knead it a few times just to make sure all the ingredients are fully combined.
3. Line a baking sheet (small enough to fit in the fridge) with parchment paper.
4. Melt chocolate chips with coconut oil - microwave for 1 minute, then stir well and microwave for another 30 seconds and if needed more until the chocolate is completely melted and smooth.
5. Using a fork, dip the balls into the melted chocolate, letting the excess drip off and then place them on parchment paper.
6. Sprinkle with desired toppings. Once all the balls are coated you can transfer the baking sheet to the refrigerator where the chocolate will harden more quickly.
7. Freeze for 30 minutes and enjoy!
