PUMPKIN PIE BREAD

Ingredients:
2/3 cup coconut sugar
1 cup pumpkin purée (make sure not to confuse it with canned pumpkin pie!)
1/2 cup avocado oil
2 tbsp cashew butter (feel free to sub with almond butter)
2 eggs
2 cup GF oat flour
2 scoops unflavored collagen (optional)
1 tsp baking soda
1/2 tsp pink salt
1 1/4 tbsp pumpkin pie spice
1/2 tsp cinnamon
Optional add-ons:
1/2 cup pecans
1/2 cup chocolate chips

 

Directions:
1. Whisk eggs.

2. Add coconut sugar to the egg mixture and whisk until sugar is dissolved.

3. Add the rest of the wet ingredients and add to dry.

4. Add nuts and chocolate chips, if desired.

5. Pour the batter into a greased loaf pan layered with parchment paper (also greased) and bake at 350 for 50-60 mins.

6. Let cool and rest before slicing.
