CRISPY CURRIED CHICKPEA GRILLED HALLOUMI KALE SALAD
GARLICKY KALE!
When using kale for salads:
1️⃣ Make sure it’s dry and
2️⃣ Massaging kale pieces in EVOO is the secret to success
Ingredients:
1 bunch of kale
4 slices halloumi cheese
1/2 tsp salt
2 tbsp Parmesan cheese
1 garlic clove, minced
2 tbsp olive oil
Directions:
1. Wash and air dry kale.
2. Add olive oil and massage the salad with your hands.
3. Add salt, garlic and massage again.
4. Toss in Parmesan cheese.
5. Top with grilled halloumi and chickpeas
GRILLED HALLOUMI!
Slice into 1/2 inch thick pieces and cook in a pan lightly greased with olive oil for 1 minute on each side or until crispy.
CURRIED CHICKPEAS!
Ingredients:
1 can chickpeas
2 tbsp avocado oil
1/2 tsp smoked paprika
1/2 tsp curry powder
1/3 tsp salt
1/2 tsp garlic powder
Dash black pepper
Directions:
1. Preheat the oven at 400F.
2. Rinse and drain a can of organic chickpeas thoroughly under cold water.
3. Pat chickpeas very dry with clean dish towel or paper towels.
4. Remove any chickpea skin that comes off while drying.
5. Toss the chickpeas in avocado oil and all the spices, coating evenly.
6. Bake for 35 minutes tossing halfway through.
7. Sprinkle chickpeas with more smoked paprika, toss well and enjoy on top of your salad!
