PROTEIN COCONUT-BANANA OVERNIGHT OATS

Ingredients:
2/3 cup cashew milk*
1/2 cup rolled oats
1/4 tsp cinnamon
2 tsp chia seeds
1 tbsp flax meal
1/2 banana, mashed
2 tbsp shredded coconut
1 scoop Vital Proteins Collagen Peptides
2 tbsp plain yogurt

 

Directions:
1. In a mason jar or small bowl with a lid, add cashew milk, chia seeds, flax meal, collagen, yogurt, shredded coconut, cinnamon and mashed banana and stir with a spoon to combine. 

2. Add oats and stir a few more times. Cover securely with a lid or seal and set in the refrigerator overnight (or for at least 6 hours) to set/soak.

3. In the morning, top it off with a dollop of vanilla yogurt, the rest of the 1/2 banana, flax meal, creamy peanut butter and shredded coconut. 

4. Enjoy!

*substitute cashew milk for any nut milk
