EASY TERIYAKI CHICKEN

Ingredients:
2 lbs chicken breast
1/2 c mirin (sweet and savory rice cooking wine you can get at any supermarket!)
1/2 c coconut aminos
2 tbsp coconut sugar
salt to taste

 

Directions:
1. Wash a pat dry the chicken. Cut into strips.

2. In a bowl, combine mirin, coconut aminos, coconut sugar and salt and mix until sugar gets dissolved.

3. Preheat a pan to medium-high heat, add 1 1/2 tbsp olive oil.

4. Transfer the chicken to the pan and cook stirring occasionally for about 8 minutes or until crispy.

5. Add in Teriyaki Sauce, mix to combine and cover with lid.

6. Cook for 3 minutes and sprinkle with sesame seeds.

7. I served mine over pasta tossed in Sonoma Gourmet Kale Pesto White Cheddar Sauce and green peas!
