VEGAN OATMEAL BANANA CASHEW BUTTER BREAKFAST COOKIES

Ingredients (makes 8-10 cookies):
2 spotty bananas
4 tbs cashew butter (feel free to sub for almond or peanut butter if needed)
1 cup rolled oats
chocolate chips
1 tsp cinnamon

 

Directions:
1. Preheat oven to 400F.

2. Mash the bananas, add cashew butter and cinnamon and mix well.

3. Mix in the oats to the batter and stir well. Then, stir in chocolate chips.

4. Roll the cookies into balls with (I used a tablespoon to scoop), flatten them and place on a baking sheet sprayed with coconut oil.

5. Bake at 400F for 18-20 minutes for super soft texture on the inside, slightly crispy on the outside.

NOTES: (You can bake these cookies at 350F for 20-22 minutes and the texture will be soft on the outside as well as on the inside!)
