APPLE RING PANCAKES
Ingredients:
2 large apples
1 egg
1 tsp vanilla extract
2 tbsp coconut sugar
1/3 c oat flour
1/4 c almond flour
1/2 c almond milk
1 tsp baking powder
Pinch of salt
1 tbsp 4th & Heart Vanilla Ghee or coconut oil for cooking
Directions:
1. Slice apples into 1/4-inch thick round slices and remove the middle of each apple slice with a paring knife.
2. Mix dry and wet ingredients in two separate bowls!
3. Mix the wet ingredients into dry ingredients and stir until incorporated (the batter should be liquidy).
4. In a pan, heat vanilla ghee or coconut oil.
5. Dip apple slices in batter and cook for 2-3 minutes, or until golden brown.
6. Sprinkle with powdered sugar, and pair with nut butter + yogurt or enjoy on its own!
