GF CARROT CAKE APPLE BREAKFAST MUFFINS
Ingredients:
1/4 cup maple syrup
1/4 cup coconut or avocado oil
1 egg
2 tsp vanilla extract
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp nutmeg
1 1/2 tsp cinnamon
1/4 c rolled oats
1 cup Cassava Flour or 1-to-1 GF flour
1/4 cup chocolate chips
1 medium grated apple (1/2 cup)
1-2 small grated carrots (1/2 cup)
1/4 cup almond milk
Directions:
1. Preheat your oven to 350F.
2. Mix dry and wet ingredients in two separate bowls.
3. Mix the wet ingredients into dry ingredients and stir until incorporated.
4. Bake the muffins for 25-30 minutes.
Cinnamon Cream Cheese Frosting
Ingredients:
1/3 c cream cheese
1 tbsp butter, softened
2 tsp vanilla extract
3 tbsp powdered sugar
1/2 tsp cinnamon
Mix well and spread over your muffins.
Optional muffin add-ons: raisins, walnuts, pecans.
