GF CARROT-APPLE CHOCOLATE-CHIP BREAKFAST BREAD
Ingredients:
1/4 cup maple syrup
1/4 cup oil (i used coconut oil but also tested it with avocado oil - both work great!)
1 egg
2 tsp vanilla extract
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp nutmeg
1 1/2 tsp cinnamon
1/4 cup rolled oats
1 cup 1-to-1 GF flour
1/4 cup chocolate chips to the batter + more to top off the bread (I used sugar-free chocolate chips)
1 medium grated apple (1/2 cup)
1 grated carrot (1/2 cup)
1/4 cup almond milk
Directions:
1. Preheat your oven to 350F.
2. Combine all the ingredients. Grease a loaf pan with oil and line with greased parchment paper and bake the loaf for 45 minutes.
Cinnamon frosting (optional):
1/3 c cream cheese
1 tbsp butter, softened
2 tsp vanilla extract
3 tbsp powdered sugar
1/2 tsp cinnamon
Mix well and spread over your bread.
Optional bread add-ons: raisins, walnuts, pecans!
