GF HIGH PROTEIN STRAWBERRY JAM FILLED MUFFINS

Ingredients:
1 cup gf oat flour
1 1/2 cup almond flour
2 scoops collagen peptides
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
3 tbsp melted coconut oil
1/2 cup plain yogurt (dairy-free yogurt works too)
1/3 cup almond or cashew milk
1/2 cup maple syrup
2 eggs
1 1/2 tsp almond extract
1/2 tsp vanilla extract
1/4 cup strawberry preserve

 

Directions:
1. Mix wet and dry ingredients together in two separate bowls.

2. Add wet mixture into dry and mix well.

3. Next, spoon 1 1/2 tablespoons of batter into each muffin tin.

4. Top with a heaping teaspoon of jam then top with another heaping tablespoon of batter on top of the jam.

5. Bake at 375F for 20-22 minutes (keep an eye on them!).
