GF OLIVE OIL SCALLION PANCAKES

Ingredients:
1 cup Cassava flour
2 eggs, (one - 8 min boiled, one raw)
4-5 tbsp scallions, chopped
1/4 cup fresh chopped parsley
1 cup plain whole milk yogurt room temperature (I used 4%)
2 tbsp extra virgin olive oil for the batter (+ 1 tbsp for cooking)
1/3 c water
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp black pepper

 

Directions:
1. In a bowl combine the yogurt, raw egg, baking soda, salt and pepper. Mix until well combined.

2. Chop up a boiled egg and add it to the mixture along with scallions & parsley.

3. Add in the flour and mix until well combined.

4. Preheat a pan to medium heat, add olive oil and cook pancakes for 3-4 minutes on each side with the lid on.

5. Pair with greek yogurt and drizzle olive oil and za’atar overtop. ENJOY!
