GF PUMPKIN PIE OVERNIGHT OATS

 

Ingredients:
1/2 cup gf rolled oats
2/3 cup cashew mylk or mylk of choice
1/2 cup pumpkin purée
2 tsp chia seeds
1/2 tsp pumpkin spice
1/2 tsp vanilla extract
1 tsp maple syrup
1/4 tsp cinnamon
1 tsp pumpkin seeds

Directions:
Combine all ingredients and refrigerate overnight!

 

Toppings: bananas, pumpkin seeds, and a dollop of yogurt for protein boost, maple butter (optional)
