LOADED LUNCH SALAD
Ingredients (Serves 2):
2 cups arugula, chopped
1/4 cup parsley, chopped
1 cup chickpeas
1 cup grape tomatoes
2 tbsp kalamata olives
1/2 avocado
1/3 cup baby corn pieces
1/3 cup fresh mozzarella
2 boiled eggs (optional)
salt + pepper to taste
Dressing:
olive oil + balsamic vinegar
Combine all the ingredients, season with dressing. You can add extra protein like I did or eat it as is! Grilled chicken, shrimp or salmon would also go really well with this salad.
