GLUTEN-FREE OATMEAL RAISIN BREAKFAST BASKETS
Ingredients:
1 tbsp coconut oil, melted
2 ripe mashed bananas
1 1/2 c GF rolled oats
1 tsp cinnamon
1 tbsp maple syrup
1/2 tsp vanilla extract
1/3 c raisins
pinch salt
Directions:
1. Preheat oven to 350F.
2. Mash the bananas, add coconut oil, maple syrup, vanilla extract, cinammon, salt and mix well.
3. Mix in the oats to the batter and stir well.
4. Stir in raisins.
5. Using a tablespoon fill in a muffin cup and then press down with your fingers to make a basket shape.
6. Bake for 15-17 minutes.
7. Let it cool and fill in with yogurt and bananas for bananas and cream basket, peanut butter and jelly (mashed & microwaved raspberries for jelly), bananas, yogurt and blueberries. Feel free to get creative here!

*These baskets are meal-prep friendly! You can refrigerate plain baskets for up to 5 day and have them throughout the week filling them with desired toppings each day for extra freshness!
