JUICY GREEK TURKEY BURGERS W/ BUCKWHEAT, HARISSA, PICKLES & PINTO BEAN SALAD
Ingredients:
1 lb. ground turkey thigh
1 egg
1 shallot or small red onion, finely chopped
1/3 cup crumbled feta
1/3 cup chopped parsley
3 cloves garlic, minced or 1 tsp garlic powder
1 tsp ground oregano
1/2 tsp pink salt
1/3 tsp black pepper
1/2 tsp paprika
1/2 tsp thyme
Directions:
1. Whisk an egg, hand mix the rest of the ingredients then combine with the whisked egg.
2. Form the mixture into burgers.
3. Cook in a pan coated with olive oil over medium heat for 4 minutes on each side, cover with lid and cook until ready.
PINTO BEAN SALAD:
In a bowl combine 1 can pinto beans, rinsed and dried, 1/3 c fresh chopped dill & parsley, salt, pepper, 1/4 c thinly sliced shallots and 1-3 tbs olive oil.
BUCKWHEAT:
I always use toasted buckwheat. Boil, add salt, garlic powder and lots of butter. Enjoy!
