GLUTEN-FREE PLANTAIN PATTIES
Ingredients:
2 ripe plantains
1/4 tsp salt
5-6 garlic cloves
olive oil for cooking
Directions:
1. In a bowl, mash the plantains with a fork and add salt.
2. Preheat your pan at medium heat and cook 5 cloves of garlic in extra virgin olive oil (for flavor) until browned. r
3. Remove garlic from the pan.
4. Using a tablespoon transfer mashed plantains into the same pan with garlic infused oil and cook at medium-low heat for 4 minutes on each side.
5. Remove patties from the pan, brush with minced garlic and some olive oil & transfer them to the oven and bake for another 10 minutes.
6. Plate and enjoy!
