GLUTEN-FREE RICOTTA GNOCCHI

Ingredients:
16 oz Ricotta cheese 
*2/3 c white rice flour + more for dusting 
1 tsp vanilla extract
2 tbsp coconut sugar
1 egg
Pinch of salt

 

Directions:
1. In a medium bowl whisk an egg.

2. Add coconut sugar and mix until the sugar is dissolved.

3. Add ricotta cheese, cinnamon, vanilla extract and salt.

4. Slowly stir in the flour.

5. Using your hands mix the ingredients until well incorporated.

6. Dust the work surface with flour.

7. Roll the dough using your hands into a big log, about 1 1/2 - 2 inches thick and then cut into small parts, about 1 inch thick.

8. Cook your gnocchi in a pot of salted boiling water until they float (2-3 min). 

9. Serve immediately with yogurt and enjoy!

*you can sub for white or cassava flour 

Make sure not to overcook as they’ll fall apart
