VEGAN, GF 3-INGREDIENT SWEET POTATO TORTILLAS
Ingredients:
1 1/2 cups mashed orange sweet potatoes
1 1/3 to 1 1/2 cups cassava flour
2 tbsp Organic Virgin Coconut Oil (*I used Spectrum Organic)
Directions:
1. Steam sweet potatoes, mash them, and let them chill.
2. To a mixing bowl, add the mashed sweet potato and gradually stir in the cassava flour. Mix until well-combined.
3. Add in the Spectrum Organic Virgin Coconut Oil and mix well.
4. Using your hands form 4-5 dough balls. Dust your working table with some flour and roll out each tortilla with a rolling pin (they should be roughly 1/4 inch thick). Don't make them too thin, or too thick as they won't be as soft and flexible!
5. Add 1 tbsp Spectrum Organic Virgin Coconut Oil to a pan and place the tortillas in it. Cook over medium-high heat for 1 minute on each side.
6. Serve with fried eggs, bacon, avocado, tomatoes, dates, and fresh figs on the side. Enjoy!
