GLUTEN-FREE STRAWBERRY CHEESECAKE RICOTTA PIE

Ingredients:
16 oz whole milk ricotta cheese
4 tbsp maple syrup
1/2 cup white or brown rice flour
4 oz plain whole milk yogurt
1 egg
1 tsp vanilla extract
1/2 cup strawberries (or blueberries, blackberries, raspberries)

Directions:
1. Preheat oven to 350F.

2. In a medium bowl, whisk an egg.

3. Add maple syrup, vanilla extract, ricotta, yogurt and mix well.

3. Add chopped strawberries.

4. Mix in the flour and stir until well combined.

4. *Pour the batter into a greased 8x8 baking pan add strawberries on top and bake for 50-60 minutes until golden brown. (keep an eye on it)

This pie is best enjoyed with yogurt, berries, and your favorite nut butter!

Best enjoyed the next day after it’s been chilled in the fridge overnight.
