gf OATMEAL APRICOT BREAKFAST BARS W/ HOMEMADE APRICOT JAM

Ingredients:
1/2 cup butter, softened to room temperature
1 1/4 GF rolled oats
3/4 cup GF oat flour
1/2 cup coconut sugar
1/2 tsp baking soda
1 tsp baking powder
1 cup apricot jam (eq 6 medium apricots) *jam recipe shown below!

 

Directions:
1. Preheat the oven to 350 degrees.

2. Layer a baking dish with parchment paper and grease it with coconut oil.

3. In a mixing bowl, combine the softened butter, coconut sugar, baking soda, oats, and oat flour using a fork, finish combining with our hands.

4. Measure out 2 cups of the oat mixture and gently press into the bottom of the baking dish.

5. Spread the apricot jam over the crust stopping about ¼" from the crust edge.

6. Sprinkle the remaining crumble topping over the top of the apricot jam.

7. Bake for 30-35 minutes. Let cool, cut into bars, and enjoy!


Homemade Apricot Jam:
1. Add apricots to a medium saucepan with 1 tbsp water and 2 tbsp maple syrup.

2. Mash up with a fork or whisker and bring it to a boil.

3. Lower the heat and let it sauté for 10 minutes.

4. Pour the mixture into the blender and blend for 30 seconds.

It’s so fresh and delicious!

*You can use store bought apricot jam/preserve and they are as good!
