FRESH HIGH PROTEIN SUMMER SALAD

Ingredients:
1/2 cup canned sweet corn
1 cup garbanzo beans, rinsed + drained
1/3 cup chopped fresh parsley
1 cup cherry tomatoes
1 avocado
3-4 small cucumbers
1/2 red onion
1/3 cup feta cheese, crumbled
salt + pepper to taste

Dressing:
1 tbsp olive oil
1 tbsp balsamic vinaigrette

 

Directions:
1. Chop the tomatoes, red onion, cucumber, avocado and parsley.

2. Combine all the ingredients and season with dressing.

3. Enjoy!
