OPEN-FACED TUNA & EGG MELT SALAD SANDWICH
Ingredients:
2 cans of tuna
1 hard boiled egg, mashed
fresh cilantro & parsley, chopped
2 tbsp chopped scallions
2 tbsp avocado oil mayo (I used Chosen Foods)
1 tbsp spicy brown mustard (I used Sir Kensington)
salt
pepper
dill weed
Directions:
1. Mash the tuna with fork.
2. Combine with the rest of ingredients and mix well.
3. Top toasted sourdough bread (or whatever bread you have) with tuna-egg salad.
4. Add a slice of mozzarella cheese and toast in the toaster oven for 3-4 minutes.
5. ENJOY!
