PALEO PUMPKIN BANANA PANCAKES
Ingredients:
1 banana
1 tsp maple syrup
1 egg
3 tbsp of almond flour
1 tbsp coconut flour
3 tbsp pumpkin purée
1/2 tsp of baking powder
1 tsp pumpkin spice
Directions:
1. Mash the banana, add whisked egg, baking powder, almond + coconut flour, maple syrup, and cinnamon.
2. Mix well and let the batter rest for 5 minutes.
3. Cook in a pan coated with coconut oil over low heat with the lid on for about 2-3 minutes on one side, flip and cook for another minute. Lower the heat, cover with lid and cook for a couple more minutes or until the pancakes are cooked through.
4. I topped mine with bananas, creamy peanut butter, and Trader Joe’s Maple Butter. Enjoy!
