PAN-SEARED SCALLOPS
Ingredients:
scallops
olive oil
lemon juice
garlic cloves, minced
black pepper
pink salt
Directions:
1. It’s REAL easy to cook scallops - the key is patting them dry and preheating the pan prior to cooking. In other words, start with a SUPER hot pan!
2. Marinate the scallops in olive oil, a squeeze of lemon juice, a couple cloves of minced garlic, black pepper, and pink salt.
3. Prior to cooking, completely scrape off the garlic using your fingers or the back of a knife.
4. Cook the scallops in a pan coated with extra virgin olive oil or butter at medium-high for 3 minutes on each side.
5. I serve my scallops over a bowl of pasta (organic Italian pasta from Costco - highly recommend!), mixed with dairy-free jalapeño cream cheese & arugula, and topped with avocado!
