PUMPKIN SWEET POTATO TOAST YOGURT BOWL

2-3 Japanese sweet potatoes 
Avocado oil spray 
salt to taste

banana
5 oz plain yogurt
1 tbsp nut butter of choice
2 tbsp pumpkin puree
1/2 tsp cinnamon
1 tsp hemp seeds

 

Directions:
Slice the banana. Cut the sweet potato lengthwise about 1/2 inch think, spray with avocado oil and sprinkle with salt. Bake at 400F for 25-30 minutes flipping halfway. 

To assemble a bowl:

Add 2-3 slices of sweet potato toast to a bowl, then add yogurt, pumpkin puree, nut butter, sliced banana and hemp seeds. Sprinkle with cinnamon and drizzle with honey!

Mix the yogurt with pumpkin puree and enjoy!
