RIGATONI WITH BURRATA AND BURST TOMATOES

 

Ingredients:
8 oz Rigatoni Pasta
3 c cherry tomatoes
1/2 tsp thyme
1/2 c fresh basil
4 oz fresh burrata *
3-4 cloves garlic
2 tsp oregano
1/4 c balsamic vinegar 
1/4 c freshly grated parmesan
1/4 c olive oil, possibly more
Salt + black pepper to taste 

 

Directions:
1. Bring a large pot of water to a boil and add pasta.

2. Cook the pasta then drain.

3. Add olive oil, salt & toss.

4. Meanwhile, heat 2 tbsp olive oil in a skillet until hot.

5. Add garlic cloves to the pan to infuse the olive oil.

6. Sauté garlic for 2-3 minutes until golden brown.

7. Add in the cherry tomatoes and cook in a super hot pan until they burst.

8. Once they burst, toss them!

9. Add salt + pepper to taste and thyme.

10. Pour balsamic vinegar into the pan and cook the tomatoes for another minute.

11. Mix in tomatoes to the pasta, add parmesan, oregano, basil, olive oil and gently toss!

12. When serving, top it off with Burrata cheese, sprinkle with more black pepper and drizzle with more olive oil. Enjoy!

*mozzarella is an easy substitution for burrata
