PROTEIN WHOLE WHEAT PITA BREAD WITH AVOCADO AND HONEY

Ingredients:
2 tbsp Extra Virgin Olive Oil
1/2 cup greek yogurt (*I used 2%)
1/2 cup lukewarm water
1/2 tsp salt
1 tsp baking soda (dissolve in 1 tbsp hot water)
1 tbsp coconut sugar
1 cup + 6 tbsp Whole Wheat Flour

 

Directions:
1. In a large mixing bowl put lukewarm water and add the yogurt. Mix well and add Olive Oil.

2. Then add coconut sugar, baking soda and salt. Stir to dissolve and until frothy and bubbly.

3. Gradually add the whole wheat flour and stir with a metal or wooden spoon until the mixture forms a shaggy mass.

4. Dust with a little reserved flour then knead in a bowl for 1 minute.

5. Drizzle the dough with 1 tbsp of Olive Oil, cover bowl tightly with plastic wrap, then cover with a towel.

6. Put the bowl in a warm (not hot) place and let rest for 20-30 minutes or up to an hour then knead again (the dough should be soft and a bit moist).

7. Roll down dough and divide it into 4-5 pieces of equal size. Form each piece into a little ball. Place dough balls on a work surface and roll the dough about 1/4 inch thick.

8. Transfer the pita to a pan lightly greased with Olive Oil and cook at medium-low heat for 3-4 minutes on each side.

9. Transfer warm pita to a napkin-lined basket and cover so bread stays soft.

10. Drizzle with extra Olive Oil or top with butter.

11. Make sure to try this combo - pita bread, avocado and honey.
