CARROT CAKE CHIA PUDDING

 

Ingredients:
1/4 c chia seeds
1 cup cashew milk or dairy-free milk of choice
1-2 tablespoons maple syrup
1/4 c raisins
1 1/2 tbsp shredded coconut
1/4 c shredded carrot
1/4 c walnut pieces
1/2 tsp cinnamon
1/4-1/2 tsp ground cardamom 1/4 tsp ground ginger
1/4 tsp salt
1 tsp vanilla extract
Splash almond extract

Directions:
1. Add all the ingredients to a bowl, mix well.

2. Refrigerate overnight or at least for 4 hours.

3. Top with whipped cream, or Greek yogurt. Enjoy!
