PUMPKIN OATMEAL COOKIES
Ingredients:
1 cup GF rolled oats
1 cup oatmeal flour
1/2 cup pumpkin purée
1 tsp vanilla extract
1/2 cup coconut sugar
1/4 tsp salt
1 tsp pumpkin spice
1 tsp cinnamon
3 tbsp flax meal
1/2 tsp baking soda
1/2 tsp baking powder
1 stick (1/2 cup) unsalted butter
Directions:
1. In a large bowl, whisk together the oat flour, pumpkin pie spice, cinnamon, baking soda, baking powder and salt & set aside.
2. Using an electric mixer, combine together the butter, coconut sugar & vanilla extract and mix until fully combined. Then mix in the pumpkin puree until well combined.
4. Slowly mix in the dry ingredients, then mix in the rolled oats.
5. Cover the cookie dough tightly with plastic wrap and refrigerate for 30 minutes.
6. Using a cookie scoop, scoop the cookie dough and place onto baking pan covered with greased parchment paper.
7. Slightly press down the cookie with your hand to flatten each ball of cookie dough. Add chocolate chips :)
8. Bake at 350°F for 18 minutes
9. Let cool and enjoy!
