GF PEANUT BUTTER CUP COOKIES
Ingredients:
1 cup super fine almond flour
1/2 cup hazelnut meal (if you don’t have any, use extra almond flour)
1/2 cup creamy peanut butter (feel free to sub for cashew or almond butter)
1 egg
1 tsp cinnamon
1/2 tsp vanilla extract
5 tbsp coconut sugar
3 packs peanut butter cups (6 cups) (*I used Perfect Bar)
Directions:
1. Whisk an egg with coconut sugar cinnamon (this step is important so the sugar dissolved before baking).
2. Add peanut butter and mix until well combined.
3. Add the remaining dry ingredients, mix well and form 1 1/2 tbsp of batter into round balls. press a peanut butter cup into each ball.
4. Bake at 350F for 8 minutes (do not over bake).
5. Sprinkle with flaky sea salt and enjoy!
